A number of the blogs I frequent have mentioned a four week challenge with a list of "assignments" to be completed that day. Me, being the schedule and list obsessed person that I am - jumped on the band wagon like nobody's business! Woah Nellie! These assignments were sometimes more than ten different projects and I just can't handle that while working full time. Sooooo... I changed it up as follows:
I wrote down a certain project, weekly task, or whatever my little heart wished that would cover 30 days. I then wrote in the corner of the card the "complete by" date which gives me a little more wiggle room.
So...now I have 30 lovely cards that I am going to tape all over my fridge and then pull off as each one is completed.
I will try to post a picture of the fridge on 5/1/2012 since that is the day I start the challenge and will indicate the tasks I complete each week.

WHEELIN' WEDNESDAY: Physician's Formula

Tasteful Tuesday: Easy Fish Dish for Fridays
I really don’t enjoy following recipes (which I why I don’t bake)- all my meals are on the fly or if I have learned them from another person (namely, my mama). I am sure the following recipe is written multiple times over, but heck, it worked for me.
I threw this together with the sole purpose of utilizing the oven time to wash dishes and start a load of laundry. You, however, may wipe a kid’s nose, mop the floor, vacuum a room, or dance about in some erratic fashion.
Ingredients for two hungry people- please multiply this at your discretion
8 ounce of mushrooms- sliced
3 mid sized sweet peppers-sliced
6 dover filets (these are quite thin)
For Taste:
Olive oil
Butter
Salt
Pepper
Fresh squeezed lemon juice
Side Item:
Rice cooked with vegetable broth
Directions:
I started the rice and then began slicing the vegetables.
I covered the bottom of the cooking pan with a light layer of butter and then laid out the sliced mushrooms and peppers.
Placed in the oven for 20 minutes at 425 degrees and then removed from the oven and placed the filets on top of the vegetables. The filets had been salted, peppered, and sprinkled with olive oil and lemon. These were placed in the oven for no more than 10 minutes.
Plate and serve!
